Fermented Korean Hot Pepper Paste or Gochujang is an indispensable ingredient in the Korean kitchen. Used in cooking, and as condiment (often combined with other ingredients), thick, rich gochujang adds spiciness, sweetness and umami to dishes. Combine 1 part sesame oil with 3 parts Japanese soy and 3 parts gochujang for an intense, mahogany-coloured sauce for japchae and other noodle dishes.
